I promise you've all had a lovely week. It's been a decorated merely good i here. Had a briefing with M's kindergarten teacher earlier in the week and she had all good things to say well-nigh her and how she'south doing. My smart picayune cookie. 😀

Even J got some props. He wandered over and asked what magnet letter he was holding. I asked him what it was and he correctly said, "R." The teacher was amazed he knows his letters at historic period 3 – said she had a spot in her class cause he was ready.

On to today'due south recipe, thistaco-flavored vegetarian power basin!

I'thousand all about themes and I'm absolutely all kinds of off with this one. Information technology's a meatless Monday dish but information technology'due south not Mon today. Information technology's also a taco Tuesday dish just it'southward not Tuesday either.

So possibly I'm a scrap wonky in posting this on a Friday, only you tin can certainly enjoy it either of those days. Oh, or any other day of the week because I'm all well-nigh a succulent plant-based power basin and a taco nighttime no matter what mean solar day it is!

And these are really pretty easy to put together! You just roast your sweet potatoes, then saute your veggies and beans and get together.

And of grade, add every bit many toppings as your heart desires. Don't concord back on the toppings. I'chiliad ALL nearly the toppings. 😉

OK, let'south get to cooking.

Roasted sweet potatoes Black beans, pepper and tomato saute

Notes on this vegetarian power bowl:

  • I like to utilize fire-roasted diced tomatoes for a fiddling extra flavor and kick, but you lot could substitute another canned tomato. Or employ chopped fresh tomatoes.
  • I use bootleg taco seasoning (so I can control the sodium and know what I'm getting), simply you tin substitute shop-bought.
  • I prefer black beans here, but you could use pinto beans or kidney beans.
  • You could substitute regular plain yogurt for the Greek yogurt, if that'south what you lot have. The sauce just won't exist quite as thick. You can also employ sour cream if you prefer. (Or get out it off if you're vegan.)
  • You lot can serve this mixture over spinach or romaine lettuce for a salad bowl.
  • Or you tin can wrap it all up in a burrito! (Check out my edible bean and rice burritos for some other delicious vegetarian meal.)
  • You can also use this mixture to make quesadillas. I've done that before with the leftovers and it was delicious!
  • You lot tin, if you're not vegetarian, add some roasted or rotisserie chicken to this dish for a heartier repast. You lot can either roast craven breasts on a separate sheet pan in the oven with the sweet potatoes or stir in some shop-bought or leftover craven with the black bean mixture on the stove.

Ingredients

For the sweetness potatoes:

  • 3 medium sweet potatoes, peeled and diced
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon taco seasoning (homemade or store-bought)

For the bowls:

  • one teaspoon extra-virgin olive oil
  • 1/two minor onion, chopped
  • 1 dark-green pepper, chopped
  • ane jalapeno, finely chopped
  • 1 (14.5 oz.) tin burn-roasted diced tomatoes, drained
  • one (15.5 oz.) can black beans, rinsed and tuckered
  • ane teaspoon taco seasoning
  • Optional toppings: chopped lettuce, shredded cheese, avocado slices, salsa, lime wedges

For the spiced Greek yogurt sauce:

  • 1/four loving cup manifestly Greek yogurt (I employ not-fat)
  • ii teaspoons fresh lime juice
  • 1/ii teaspoon sriracha sauce
  • Compression of salt

Instructions

  1. Preheat oven to 400.
  2. Toss sweet potatoes with olive oil and taco seasoning and spread evenly on a baking sheet.
  3. Roast at 400 for thirty-40 minutes, until cooked through and slightly browned.
  4. Meanwhile, oestrus 1 teaspoon olive oil in a large skillet over medium heat.
  5. Add onion, pepper and jalapeño and saute for 5-half dozen minutes, until tender.
  6. Add drained tomatoes, blackness beans and taco seasoning and cook five more minutes, until heated through.
  7. To make the yogurt sauce, combine yogurt, lime juice, smirch and a pinch of common salt in a pocket-size basin. Stir well to combine.
  8. To get together, split sweet potatoes among the serving bowls and top with black bean mixture (or serve them side-past-side, if you adopt). Add desired topping and spiced yogurt sauce.

Notes

I like to use fire-roasted diced tomatoes for a little extra flavor and kicking, but you could substitute another canned tomato plant. Or use chopped fresh tomatoes.

I prefer black beans here, but you could utilise pinto beans or kidney beans.

Y'all could substitute regular plain yogurt for the Greek yogurt, if that's what you have. The sauce just won't be quite equally thick. You can too use sour foam if you prefer.

You tin also serve this mixture over spinach or romaine lettuce for a salad bowl or you can wrap it all up in a burrito! Y'all can also apply this mixture as a filling for quesadillas.
